Meat Processing of Sichuan Province


The Key Laboratory for Meat Processing of Sichuan Province (hereinafter referred to as "the Laboratory") was officially co-established by Chengdu University and Sichuan Goldkinn Industry Group Co., Ltd. in 2007 with the approval of the Science and Technology Department of Sichuan Province, in response to national industrial policies and the development demands of Sichuan Characteristic Industries.  Since its establishment, the Laboratory has collaborated with universities, scientific research institutes, and leading enterprises in Sichuan to create a series of meat processing technology R & D platforms including laboratories, engineering centers, and industrial research institutes in Sichuan that are affiliated to the Science and Technology Department of Sichuan Province, Sichuan Provincial Development and Reform Commission, or the Education Department of Sichuan Province, such as Sichuan Meat Quality Improvement & Safety Control Engineering Technology Laboratory, Sichuan University Key Laboratory for Food Processing, and Sichuan Meat Industry Technology Research Institute.  The R & D laboratories set up in Chengdu University involving food technology, Sichuan cuisine pre-conditioning, biochemical extraction, biological fermentation, and safety control cover a total area of 1,800 square meters and are equipped with instruments and facilities worth nearly RMB 30 million. In addition, it has built product R&D sub-centers and industrial development bases involving different varieties of livestock and poultry in enterprises.  The Laboratory has more than 40 full-time and part-time researchers, of whom 28 are professors, associate professors, and senior engineering and technical personnel from enterprises, 70% have doctoral degrees, 7 are external experts from universities and scientific research institutions at home and abroad, and 6 are senior engineering and technical personnel from enterprises. Guided by industrial demands, the platform has carried out more than 60 national and provincial projects focusing on multiple fields including the modernization of traditional meat products, the industrialization of Sichuan meat dishes, energy conservation and emission reduction in meat products processing and the comprehensive utilization of the by-products, and the quality improvement of meat products and the traceability of quality safety. It has developed more than 100 proprietary technologies, and has been granted over 60 patents. It has won more than 10 awards of "Sichuan Provincial Science and Technology Progress Award", and has guided the establishment of over 20 industrial processing bases, providing strong technical and talent support for the industrial development.
